Sugar Cookies from Amish Country

 

What is needed:

Electric Mixer

Large mixing bowl

Dough hook attachment

Measuring cup for dry ingredients

Measuring cup for liquid ingredients

Measuring spoons

Spatula

 

Ingredients:

5 cups flour

1 cup sugar

3/4 teaspoon salt

1 teaspoon baking soda

2 teaspoons baking powder

1 cup shortening

1/3 cup buttermilk

2 large eggs

1 1/2 teaspoon pure vanilla extract

1/2 stick unsalted butter at room temperature

 

Sift all dry ingredients in mixing bowl.  Add shortening and mix on low speed until well mixed.  It will resemble pie crust.  Add buttermilk, eggs, and vanilla.  Mix well on medium speed.  The dough will resemble pie crust.  Add room temperature butter to dough and mix on medium high forming a soft dough.  Remove mixing bowl from mixer stand and cover with plastic wrap.  Place in refrigerator and allow to rest one hour.  Divide dough into eighths.  Using one eighth of the dough at a time, roll out on a lightly floured surface.  Keep leftover cookie dough in the refrigerator covered with plastic wrap.  Cut out cookies.  Place cookies on a non-stick baking sheet.  Bake at 350 degrees for 7-10 minutes just until edges of cookies are lightly brown. Remove cookies from oven and cool on a cookie rack.

 

Divide remaining cookie dough into equal parts.  Individually wrap with plastic wrap.  Will keep in the refrigerator for one week or up to one month in the freezer.
