| Recipe Box < Egg Recipes Slovak Pancakes What is needed:
Non-stick griddle or large non-stick skillet or cast iron skillet
Spatula
Measuring cup for dry ingredients
Measuring cup for liquid ingredients
Measuring spoons
Large Bowl
Hand mixer
Large plate
Serving platter
Ingredients:
1 cup all purpose flour
1 Tablespoon sugar
2 large eggs
1/2 cup whole milk
1 jar grape jelly
Place non-stick skillet over medium high heat.
In large bowl, add flour, sugar, eggs, milk and beat on medium low with hand mixer until blended and smooth.
Check to be sure your skillet is hot by sprinkling on a few drops of water. If the water skips quickly across the surface and evaporates, the skillet is ready.
With 1/3 cup measuring cup or ladle, pour pancake mixture into the center of the heated skillet. Let pancake mixture spread out on it's own into a circle. Cook until under side of pancake is slightly golden brown. You can check this by using your spatula to gently pick up the edge of the pancake and peak under for doneness. When the pancake is slightly golden brown, flip with your spatula and cook the same on the other side.
Remove cooked pancake to a plate. Spread about 1 rounded Tablespoon of grape jelly over the surface of the pancake. Roll up jelly roll style. Place on serving platter.
Cook remaining pancakes, add jelly, roll, and place on serving platter.
Serving suggestions: Try our Easy Berry Jam in place of grape jelly. Serve for breakfast with choice of juice, eggs, bacon or sausage.
Serve as a warm, hearty snack.
Add choice of pie filling instead of jelly for a crepe dessert. Sprinkle on powdered sugar and garnish with fresh fruit.

Helpful hints: If you do not have a non-stick skillet, use vegetable cooking spray to lightly coat the skillet before cooking each pancake.
