| Recipe Box < Desserts Seven Minute Frosting
What is needed:
Fine sieve
Large spoon
Double boiler
Electric hand mixer
Measuring cup for dry ingredients
Spatula
Prepared angel food cake
Ingredients:
2 egg whites
1 lb. carton sweetened frozen strawberries
1 cup sugar
dash salt
Thaw strawberries in the container. Pour thawed strawberries into fine sieve. With the back of a large spoon, gently press strawberries to drain as much liquid as you can.
Fill bottom pan of double boiler 1/2 way with water. Place bottom pan of double boiler over high heat and bring to a boil. Add egg whites, strawberries, sugar, and dash of salt to top pan of double boiler. Beat with electric hand mixer on medium high for one minute. Put top pan with strawberry mixture onto bottom pan of double boiler with boiling water. Beat with electric hand mixer for 7 minutes. Remove double boiler from stove. Remove top pan from double boiler and beat for an additional 2 minutes. Frost angel food cake.
Serving suggestions: This frosting is very light and fluffy and perfect for cupcakes and cakes to including angel food cake.
Garnish with fresh strawberries, raspberries or blueberries.
Helpful hints: If you do not have a double boiler, you can use a large pot for the bottom half and a medium pot or glass bowl for the top half to create a double boiler.
