| Recipe Box < Beef Recipes Italian Meatballs 
What is needed: Medium Bowl 2 Large pots; one for the sauce and meatballs; one for the pasta Large wooden spoon with a long handle Colander Pasta ladle or large fork for serving the pasta Ladle for the sauce and meatballs
Ingredients: 2 lbs. ground beef 1 large egg 1/4 Italian bread crumbs 2 Tablespoons Italian seasoning 1 Tablespoon minced garlic 1-2 quarts of your favorite spaghetti sauce or visit the Recipe Box for homemade marinara sauce. 1 lb. any variety of pasta
In your medium bowl add ground beef, egg, bread crumbs, italian seasoning, minced garlic. Mix well with your hands. Make 12-14 meatballs about the size of a golf ball. Place the meatballs in the spaghetti sauce. Gently stir with a wooden spoon to cover the meatballs. Put a lid on your pot. Put the flame on high and bring to a boil. Stir again gently. Put the flame on low and simmer for 1 hour. Stir occasionally. While you are cooking the pasta according to package directions, remove the lid from your sauce to release the steam. Stir occasionally. Drain the pasta. Place a serving of pasta on a plate or pasta bowl. Ladle sauce and meatballs over pasta.
Serving Suggestions: Serve Herb Olive Oil and Italian Bread with a tossed salad and choice of dressing.
For dessert purchase store bought Italian ice, canoli, or biscotti. You could also make our Italian Amaretti Cookies.
Helpful hints:
If you have left over pasta, sauce and meatballs, do not mix the pasta with the sauce. The pasta will get mushy and the sauce will lose its taste. For the leftover sauce and meatballs, rewarm in a medium pot. Buy store bought Italian rolls, split lengthwise, place meatballs in the opening, spoon sauce over meatballs. Sprinkle with dry or fresh parmesan cheese.
For leftover pasta, place in a bowl, add one tablespoon of butter, salt and pepper to taste, sprinkle with dry or fresh parmesan cheese. Cook in the microwave until heated through.
