What is Needed: 20 Sugar Cookies for 10 ice cream sandwiches 1/2 gallon ice cream; flavor of your choice Measuring cup Spatula Colored Sprinkles
Divide remaining cookie dough into equal parts. Individually wrap with plastic wrap. Will keep in the refrigerator for one week or up to one month in the freezer. While you are baking and cooling your cookies, take the ice cream from the freezer and allow to slightly soften, about 5 minutes. (Gently stir softened ice cream before using.) After cookies have cooled, measure 1/2 cup, or more, of softened ice cream and spread evenly on one cookie. Place another cookie, right side up, on top of cookie with ice cream to make a sandwich. You can frost, using our classic buttercream icing, and decorate your ice cream sandwiches by rolling the edges in colorful sprinkles or leave plain. Wrap each cookie individually in plastic wrap, place in the freezer and allow to set up for at least one hour or until ready to serve. They will keep in the freezer for at least one month.
Helpful hints: Roll out cookie dough to 1/2 or 3/4 inch thickness for ice cream sandwiches. Don't overbake cookies so they remain soft when cooled. Cookie edges should just begin to lightly brown. Remove from oven and cool. If you want to frost and decorate your ice cream sandwiches, place them in the freezer for at least 1/2 hour to set up. Make your icing. Remove one ice cream sandwich at a time from the freezer, decorate, place back in the freezer to set up again for at least 10-15 minutes. Then individually wrap each ice cream sandwich in plastic wrap and freeze until ready to serve.
