Recipe Box < Jams and Jellies 

Easy Berry Jam

What is needed:

Collander or small sieve

Measuring cup for dry ingredients

Measuring spoon

Medium bowl

Potato masher

Plastic wrap

Ingredients:

2 pints blackberries, raspberries, or strawberries

1 1/2 cups sugar

3 Tablespoon unflavored gelatin

Pinch of salt

Clean berries; blackberries and strawberries can be rinsed under cold water; gently pat dry.  Raspberries can be placed on a dry paper towel, gently wrap berries up, and shake gently to remove any dirt.  Raspberries collapse if rinsed in water.  Place berries, sugar, and salt in a medium bowl.  Mash berries, sugar, and salt with potatoe masher or back of a large fork until well blended and smooth, but leave some of the berries whole. Add unflavored gelatin to berries and mix well.  Cover bowl with plastic wrap and place in refrigerator for two days stirring with a spoon at least once a day.  Store in refrigerator for several weeks up to one month.

Serving suggestions:

Use in place of store bought jam or jelly.

Delicious on homemade biscuits.

Use with Slovak Pancake recipe.

Helpful hints:

Make sure berries are fully ripened to get the best flavor.

Store in a pretty apothocary jar.

Add a decorative label to the jar and give as a homemade gift.
