Some flour contains wheat or is unbleached. Using these types of flour will affect the result of your recipe. A wheat flour will produce a heavier dough with a toasty flavor and the dough will be tougher. Unbleachd flour will produce an off-white dough. Read package labels for details.
An all-purpose flour is just that. It can be used for cakes, muffins, pie crust, gravy, and sauces. All-purpose flour blends easily, for an elastic texture to breads and adds a smooth, creaminess to batter and sauces. Cake flour is used specifically for cake recipes and contains additives to produce a cake product. Always read of the label of the cake flour package for flour substitute options.
The lighter the sugar the lighter the finished product. Basic white sugar is used in most recipes as a basic, all purpose ingredient. Brown sugar is added to recipes to make cookies softer and chewy or to add a rich, carmel flavor. Powered sugar is typically used to make icing and frosting. Powdered sugar can also be sprinkled on cakes, brownies, french toast and the like for a decorative finish.
Corn syrup is used in recipes like pecan pie, fudge, and peanut brittle. Corn syrup produces a candy-like product and can be thickened or hardened based on cooking times. Light corn syrup would be used in recipes to create a light colored product and dark corn syrup would create a dark product with a rich carmel flavor.
